Peppermint Bark

With Christmas time coming I have started thinking about one of my favorite treats to eat and so I had to share it with you.
Peppermint Bark
2 (1 lb) White Chocolate Mint bags
1 1/2 rows of Oreo cookies.
(And that is all the ingredients!)
Now, put the chocolate in the microwave:
Microwave for 1 minute, then stir
Microwave for 1 minute, then stir
Microwave for 1 minute, then stir (or, if your microwave is like mine- you may not need to do a full minute for this last one)
While the chocolate is melting- break up Oreos into little pieces.
Once the chocolate is melted- put the broken Oreos into the chocolate and mix quickly.
Spread onto a cookie sheet and put in the freezer for 15-20 minutes.
Take out of freezer and break into small pieces.
Pass it out to your friends and neighbors, but don’t tell them that it only has 2 ingredients!
Texas Brownie Recipe

In my previous post I was talking about coffee, which reminded me of this recipe. So, I had to share it with you.
Texas Brownie
Ingredients
Brownie
2 cups sugar
2 cups flour
1/2 cup butter
1/2 cup shortening
1 cup strong brewed coffee (or water)
1/4 cup unsweetened cocoa
1 dash salt
1/2 cup buttermilk
1 teaspoon baking soda
2 egg, beaten
4 teaspoons vanilla
Frosting
1/2 cup butter
6 tablespoons milk
1/4 cup unsweetened cocoa
3 1/2 cups confectioners’ sugar
1 teaspoon vanilla
Directions
1. Preheat oven to 400°; grease an 11″ x 17″ jelly roll pan.
2. Mix sugar and flour in a bowl; in a saucepan bring to boil the butter, shortening, water, cocoa and salt; pour cocoa mixture over flour mixture and stir until combined.
3. Beat in buttermilk, baking soda, eggs and vanilla; pour into baking pan and bake for 15 minutes, until center is barely set; DO NOT OVERBAKE; the center of the brownie will be slightly puffed but, if not overbaked, will fall when cool.
4. Prepare the frosting while the brownie bakes; in same saucepan, bring to boil the butter, milk and cocoa; remove from heat and stir in confectioners’ sugar and vanilla; stir until smooth.
5. Pour and spread over the brownie immediately after removing it from the oven. (The frosting hardens very quickly, so you have to do this step pretty fast)
They are soooooo yummy!
